Aquafaba! – It literally means “bean water” and it is the viscous liquid in which beans and other legumes, most typically chickpeas, have been cooked. Since its discovery as a substitute for egg whites in everything from meringues to mayonnaise, the internet has been abuzz with folks sharing their recipes and experiences using this ingredient that we used to just pour down the drain.
