makes 4-6 servings

 

3 Tbsp olive or other vegetable oil

2 lbs russet or red potatoes

1 large onion, diced

2 strips tempeh bacon*, finely chopped

2 cloves garlic, coarsely chopped

1 tsp paprika

salt and freshly ground pepper to taste

 

Bake, boil or microwave potatoes until tender. Cut cooked potatoes into ½ inch cubes. Heat oil in large skillet on medium high heat until sizzling. Add the onions and cook until softened, about 3 to 4 minutes. Add tempeh and garlic and cook for 1 minute. Add paprika, potatoes, salt, and pepper. Cook, stirring occasionally, until potatoes are golden brown.
